Why the display and the consignee disagree
Return air temperature is what almost every reefer controller displays, because it is what the unit needs in order to decide whether to keep cooling.
Product temperature is what the consignee measures with a probe into the pulp, and it is what the contract specifies.
Air changes temperature quickly; boxed product changes slowly, and a carton at the centre of a tight pallet lags far behind the air moving past the stack. The reefer is not lying, it is answering a different question.
